Description

A delicious tomato free version of the classic pizza pie.

Ingredients

  • 2 whole Chicken Breasts, Chopped
  • 2 whole Shallots, Chopped
  • 5 cloves Garlic, Minced
  • A Few Good Shakes Of Salt And Pepper
  • 1 bunch Basil, Chopped, To Taste
  • 1 cup Spinach, Chopped
  • 6 ounces, weight Shredded Cheese (I Used A Mix Of Fontina, Parmesan, Asiago, And Provolone)
  • 1 whole Ball Of Homemade Pizza Dough (or A Package Of Store Bought Dough Or A Pre-cooked Crust)
  • Olive Oil, For Brushing On Crust

Preparation

Throw your chicken, shallots, salt/pepper, and garlic in a skillet and cook them up on medium heat. Once the chicken is well browned and the veggies have softened and are cooked through, remove them from the heat.

Roll out your dough and brush the olive oil across the top of your crust.

After putting on the oil, grab your chicken mixture and spread it evenly across the top of the pizza. Spread the basil on top of that. Next up, spread the spinach.

Finally you’ll sprinkle your cheese across the top. Add as much or as little suits your fancy.

Pop your finished pie into the oven set at 475F for about 9 minutes or until the cheese is bubbly and golden brown around the edges.

Pull it out and give it a minute or two to set up. Serve it up with a little parmesan, oregano, and red pepper for sprinkling.

I’m usually a strictly pepperoni kind of girl, but your photo made me want to give it a try. Wow! pretty darn tasty. I’d never had shallots before, they were a wonderful surprise. This pizza will need to be added to my rotation. I did add a smidge of pesto to the crust before topping for some added flavor. Overall, a wonderful taste combination.
