Description

Another great crockpot recipe. Chicken and Northern Beans give a twist to an old favorite…chili.

Ingredients

  • 4 whole Chicken Breast, Boiled And Shredded
  • 1 whole White Onion, Chopped
  • 3 cans (16 Oz. Size) Northern (White) Beans, Drained And Rinsed
  • 1 can (26 Ounce) Cream Of Chicken Soup
  • 1 can (28 Ounce) Rotel
  • 1 package McCormick White Chicken Chili Seasoning Mix
  • 10 ounces, fluid Chicken Broth (the Less You Use The Thicker The Chili, The More You Use The Thinner)

Preparation

Put all ingredients in a crock pot. Cook on high for a couple of hours and then switch to low for a couple of hours. Or cook all day on low if necessary.

Sour cream
Shredded cheese
Avocado
Tortilla chips or crackers

We enjoyed this as well, even my picky husband after I got him to try it!

I made two changes: I used Hunt’s Fire Roasted Tomatoes with Garlic instead of Rotel (because Mr. No Fun is not a fan of spicy) and I added a finely diced red pepper. Delicious! Will definitely be adding this to our dinner rotation.

We really liked this one. Since I had all day to cook it, I just put the bone-in chicken breasts in the bottom of the cooker (raw) and then, just before dinner, I took them out and shredded the meat and put it back in. And, since I have kids who won’t eat spicy food, I cut back on the Rotel and made up the difference with plain dice tomato. It was even better the next day!! This one is a definite “keeper” in my house!

I also just placed the uncooked chicken breasts into the slow cooker and shredded it at the end. Delicious and easy!
