Description

This chili has become a staple in our home. We love the little kick from the chiles with the pop of sweet from the corn. It’s delicious served with chips, avocados and any other topping your heart desires!

Ingredients

  • 1 whole Onion, Chopped
  • 2 Tablespoons Butter
  • 6 cloves Garlic, Minced
  • 1 pound Chicken Breasts, Cooked And Diced
  • 3 cups Chicken Broth
  • 2 jars (about 16 Oz. Jar) Tomatillo Salsa (Salsa Verde)
  • 3 cans (4 Oz. Can) Diced Green Chiles
  • 3 teaspoons Dried Oregano
  • 3 teaspoons Ground Coriander
  • 2 teaspoons Ground Cumin
  • 2 cans (15 Oz. Can) White Beans, Drained And Rinsed
  • 1 can (15 Oz. Can) Pinto Beans, Drained And Rinsed
  • 1 can (15 Oz. Can) Black Beans, Drained And Rinsed
  • 1 cup Corn
  • 1 cup Sour Cream
  • 2 cups Cheddar, Shredded

Preparation

Cook onion in the butter over medium heat until translucent. Add the garlic and cook one minute more or until fragrant. Put all the ingredients (excluding the sour cream and cheddar cheese) in a crock pot or large soup pot and cook 1-2 hours.

Put in the sour cream and cheddar before serving. Then serve with lime, sour cream, cheese, and avocado.

I think this would be better with less green chili’s. In the end that’s all I could taste. I may try it again with one can of diced green chili’s and 1/2 of one bottle salsa verde. The salt content was very high and it seemd the salsa overpowered all the other flavors.
