Description

BBQ sauce to use when grilling chicken or fish.

Ingredients

  • 3-½ pounds Fish Fillets Or Boneless Chicken Breasts
  • FOR THE SAUCE:
  • 1 cup Miracle Whip Or Mayonnaise
  • 2 Tablespoons Sugar
  • 1 Tablespoon Salt
  • 3 Tablespoons Oil
  • 2 Tablespoons Lime Juice
  • 2 Tablespoons White Vinegar
  • 1 teaspoon Cayenne Pepper
  • ¼ whole Onion, Peeled, Cut Into Wedges

Preparation

Place all of the sauce ingredients into a food processor and blend until smooth.

Place 3 1/2 pounds fish or chicken in a Ziploc bag along with 1/2 of the sauce. Seal bag and put it into the refrigerator. Marinate for 30 minutes to one hour, then discard marinade.

To grill fish or chicken on a cedar plank: Spread 1/4 cup of the remaining sauce on the cedar plank, then place the fish or chicken on the plank. Spread the remaining sauce over the meat. Grill for 20-30 minutes over medium heat, or until done.

To grill chicken over direct heat: Place chicken pieces directly on the grill, and baste with remaining sauce while grilling and turning over medium heat for 15-20 minutes.

Notes:
– The amount of cayenne pepper can be adjusted to suit your tastes.
– Cedar planks need to be soaked covered in water for a minimum of 4 hours before using. For best results, preheat the grill to medium (400F). Place the plank on the grill for exactly 5 minutes to preheat. Flip the plank and immediately place the saauce/meat on the hot side. Try to grill without peeking. This is the way we love our grilled cedar planked salmon.
