Description

Oven baked chicken made with things you’ve already got in the refrigerator.

Ingredients

  • 5 Tablespoons Olive Oil
  • 2 Tablespoons Soy Sauce
  • 2 Tablespoons Lemon Juice
  • 4 cloves Minced Garlic
  • 1 dash Salt
  • 1 dash Pepper
  • 2 pieces Chicken Breasts
  • 1 Tablespoon Basil

Preparation

In a gallon-sized resealable bag, mix all the ingredients, except the chicken and basil.

Put the bag in either another bag or cover it with a towel. Using a mallet, smush the garlic.

Take a fork and poke holes into the chicken. Salt and pepper each side of the chicken.

Put chicken into marinade and marinate for however long you’d like.

If you’re short on time, place the chicken in a baking dish, add marinade and sprinkle with basil. .

After the chicken has marinated, place in baking dish and sprinkle with basil. Cook at 400-425 F for 45 minutes. Enjoy.

This is take on Heather Hales recipe for Fresh Basil & Lemon Chicken, but with a few twists.

A wonderful, simple recipe, and I was easily able to cook four chicken breasts without making more of the marinade. I added a bit of ginger and put the basil on at the end because I like it fresh more than cooked. If I made it again I would halve the lemon juice, and maybe add a touch of honey or something sweet.
