Description

When the store is out of pine nuts, you make walnut pesto pasta!

Ingredients

  • ⅔ cups Walnuts
  • 6 cloves Garlic
  • 1-¼ cup Fresh Parmesan Cheese
  • 6 cups Fresh Basil, Lightly Packed
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1-½ cup Olive Oil
  • ½ whole Lemon, Juiced
  • ½ cups Mayonnaise
  • 2 pounds Pasta Shapes, Cooked, Drained And Cooled
  • 2 pints Cherry Tomatoes, Sliced In Half
  • 4 cups Fresh Spinach Leaves

Preparation

Put the walnuts, garlic, Parmesan, basil, salt and pepper in the bowl of a food processor. Pulse until everything is chopped into very small pieces. Add the olive oil and lemon juice through the spout. Pulse until incorporated. Add the mayo and pulse until incorporated again. Set aside.

Toss the pesto and the pasta together in a large serving bowl. Add the cherry tomatoes and spinach and toss.
