I love this simple, easy dish served over egg noodles. I always use homemade salsa, which is a lot less watery than storebought. You may need to adjust the quantity if using storebought salsa. Or you can just drain the salsa.
1. Cube venison into 1-inch cubes, being sure to trim all fat and silver skin.
2. In a Dutch oven, brown venison in oil.
3. Add onion; cook until soft.
4. Add remaining ingredients except flour.
5. Cover and simmer for 2 to 3 hours or until venison is tender, turning meat occasionally.
6. Remove venison to a serving platter; cover to keep warm.
7. To make gravy, dissolve flour in 1/4 cup water.
8. Add 2 tablespoons hot cooking liquid and blend well.
9. Add the flour slurry to remaining cooking liquid.
10. Cook, stirring constantly, until thickened.
11. Season to taste with salt and pepper if desired.
12. Serve over brown rice or egg noodles.
