Description

A delicious mix of whole wheat pasta, artichokes, asparagus, sun dried tomatoes, onions and cheese.

Ingredients

  • 4 cups Water
  • 2 cups Penne Pasta
  • ½ teaspoons Salt (I Use Kosher Salt)
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Garlic, Minced
  • 1 teaspoon Basil Or Italian Seasoning (your Choice)
  • 1 teaspoon Ground Pepper
  • 1 teaspoon Salt
  • 1 whole Medium Onion, Diced
  • 1 can (15 Oz. Size) Asparagus Spears, Chopped Into 1" Pieces
  • 1 jar Marinated Artichokes, Chopped (6 Ounce Jar)
  • 2 cups Sun Dried Tomatoes In Olive Oil, Sliced Or Chopped
  • 1 cup Shredded Mozzarella Cheese

Preparation

1. Boil water in a pot. Add penne pasta and salt and cook until al dente. Drain and set aside.

2. Heat olive oil over medium-high heat in a skillet or chef’s pan (I’m not picky!). Saute garlic, basil/Italian seasoning, pepper and salt for about 1 minute. Add chopped onion. Saute until translucent.

3. Reduce heat to medium-low. Add asparagus to onion mixture and saute for about 2 minutes. Add artichokes and saute for about 2 minutes. Add tomatoes and allow entire mixture to saute for about 15 minutes, stirring occasionally. You want the flavors from the various veggies to really seep into one another.

4. When you feel the flavors have really come out of all of the veggies, remove from heat. Add cooked penne pasta, stirring to combine. Add mozzarella cheese, stirring until cheese is melted and combined. Transfer to a serving dish.
