Description

Delicious and simple pizza-inspired casserole. ‘Toppings’ are on the bottom, smothered in gooey cheese with a ‘crust’ on top. Adapted from a recipe by Robin Miller.

Ingredients

  • 2 teaspoons Olive Oil
  • 1 cup Sliced Onion
  • 1 cup Chopped Peppers (green, Red, Yellow)
  • 7 ounces, weight Canned Mushrooms, Drained (one Small Can)
  • 1 cup Pepperoni Slices, Roughly Chopped
  • ½ cups Sliced Olives (green Or Black)
  • 1 cup Marinara Sauce (plus More, If Needed To Moisten The Filling)
  • 2 cups Shredded Mozzarella Cheese
  • 1 whole Egg
  • ½ cups Milk
  • ½ Tablespoons Olive Oil
  • ½ cups All-purpose Flour
  • ¼ teaspoons Kosher Salt
  • ¼ teaspoons Freshly Ground Black Pepper
  • 2 Tablespoons Grated Parmesan Cheese

Preparation

Preheat oven to 400°F. Grease an 8 x 8 inch baking dish and set aside.

Heat oil in large skillet over medium heat. Add onions, peppers and a pinch of salt and sauté until vegetables are soft, stirring frequently, about 10 minutes. Add mushrooms, pepperoni and olives and cook for 4-5 additional minutes. Add marinara sauce, bring to a simmer, and cook for 2 minutes. Add more sauce, if needed.

Transfer filling to the prepared dish. Spread evenly across the bottom of the dish and top with mozzarella cheese.

In a medium bowl, whisk together egg, milk and oil. Whisk in flour, salt and pepper until well blended. Pour mixture evenly over filling. Sprinkle with Parmesan.

Bake 25 minutes, or until golden brown. Let stand for 5 minutes before slicing and serving.
