Description

This a a great weeknight meal. I love stuffed peppers, but could not get my youngest son to eat them. I came across this recipe, and he loves it and even asks for seconds! We never have any leftovers when I make this for dinner.

Ingredients

  • 1 pound Lean Ground Beef
  • 1 whole Onion, Diced
  • 2 whole Green Peppers, Chopped
  • 2 cloves Garlic, Minced Or 1/2 Teaspoon Garlic Powder
  • ½ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • 1 can (14.5 Oz. Size) Diced Tomatoes (drained)
  • 1 cup Instant Rice (white Or Brown)
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Italian Seasoning
  • 8 ounces, weight Finely Shredded Sharp Cheddar Cheese, Divided
  • 15 ounces, fluid Can Tomato Sauce

Preparation

1. Preheat oven to 375°F.
2. In a large sauce pan, sauté ground beef and onions, green peppers and garlic for 5 minutes, or until beef is browned. Drain off excess fat, and season with salt and pepper.
3. Stir in the tomatoes, rice, Worcestershire sauce and Italian seasoning. Remove from heat, and stir in 1 cup cheese.
4. Spread mixture evenly into a 13×9 baking dish and top with tomato sauce and remaining cheese.
5. Bake for 20 minutes, until heated through and cheese is melted and bubbly.
