Description

A great Italian dish served with wine!

Ingredients

  • 14 whole Manicotti Shells
  • 1 pound Part-skim Ricotta Cheese
  • 1 cup Mozzarella Cheese, Shredded
  • 8 ounces, weight Canned Crab Meat, Lumps
  • ¼ teaspoons Salt
  • ⅛ teaspoons Pepper
  • 3 Tablespoons Parsley, Chopped
  • ¼ cups Panko Bread Crumbs
  • 2-½ cups Tomato Or Pasta Sauce
  • 3 Tablespoons Parmesan Cheese

Preparation

In a large pot add water and bring it to a boil. Add the noodles and cook for 8-10 minutes (noodles need to be tender).

Preheat oven to 350 degrees F.

When they are done, remove the pasta pot from the heat and drain the noodles and run cold water over them so that they are easy to handle.

In a large bowl combine ricotta, mozzarella, crab, salt, pepper, parsley and panko crumbs. Stir the mixture so that everything is well blended.

Grab one manicotti noodle at a time and start stuffing the mixture down the middle of the noodle.

Pack the noodle pretty good and you can even have some of the stuffing coming out.

In a large casserole dish pour some of the tomato sauce on the bottom so that’s is well covered.

Lay the noodles down and top with the remaining tomato sauce all over the noodles. Add more sauce if the noodles are not well covered. The manicotti may tend to dry out if its not covered in the sauce.

Cook for a total of 30 minutes and in the last 10 minutes remove it from the oven, top with the Parmesan cheese and place back in oven.

This was delicious, I’ve never tried it with crab meat and it was a fluke that we had some left over from thanksgiving. The only thing I did differently was add Monterrey Jack cheese in addition, two eggs, about a cup of chopped baby spinach, and omitted the bread crumbs. My kids scarfed this down as soon as it hit their plates.
