Description

I made this dish one night for my grandma and me. I was thinking about making taco salad but I really didn’t want to thaw out hamburger. So that’s when I came up with the Two Bean Tostada. I decided that, well, we don’t have to have meat—we will have protein from the beans. So I just started adding what I could find in my kitchen and that is how this creation happened. I hope you enjoy!

Ingredients

  • 1 can (15 Oz. Can) Black Beans
  • 1 can (16 Oz. Can) Refried Beans
  • ¼ cups Water
  • 1 pinch Garlic Salt
  • ¼ teaspoons Chili Powder
  • ¼ teaspoons Cumin
  • ¼ teaspoons Chopped Jalapeno, Or To Taste
  • 4 pieces Tortillas
  • ¼ cups Cooking Oil, Or More If Needed
  • 2 cups Torn Lettuce
  • ½ cups Shredded Cheese
  • ¼ cups Salsa Of Your Choice
  • Sour Cream To Garnish

Preparation

Start by adding refried beans and water to a sauce pan. Heat to medium/high and stir frequently. Add all seasonings and chopped jalapeno, continue to stir, then turn to low and stir occasionally.

Begin to heat a fry pan with the oil. When oil is bubbly, fry tortilla one at a time until crispy. Place black beans in a microwaveable bowl and microwave for 1-2 minutes until hot. When ready to serve, start by placing a crispy tortilla on a plate and spread with desired amount of refried bean mixture. Top with desired amount of black beans, lettuce, salsa, cheese, and sour cream.

Makes about 4 servings. Enjoy!
