Description

These are easy to make and relatively healthy. Most importantly, everyone in my house will eat them! Add them to your favorite prepared sauce and serve over pasta, or they make a great meatball sandwich. This makes a huge batch. We eat half and freeze the other half for another night.

Ingredients

  • 2 pounds Ground Turkey Breast Or Ground Chicken
  • 1-½ cup Breadcrumbs
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper
  • ½ cups Pesto Sauce
  • 2 whole Egg Whites
  • ⅓ cups Parmesan Cheese

Preparation

Mix everything in a bowl and combine well. Roll mixture into balls. I use an ice cream scoop to make them all the same size. I put them on a cooling rack on top of a foil-lined cookie sheet sprayed with a little cooking spray. Bake the meatballs at 375 degrees for about 20-25 minutes.

Made these tonight to toss into spaghetti tomorrow night. House smelled wonderful! We let them cool and despite Hubs and I both being full from dinner still we each popped one in our mouths. Delish! This is going on our dinner rotation.

These are awesome. We ate them as meatball subs. We used half and froze the other half. A keeper for sure!

These were so very good. I too used 20 oz. of ground lean turkey, and I do not have a oven safe cooling rack so mine were directly on the foil on a cookie sheet. My toddler and I had ours with whole wheat pasta and marinara, my hubby had a meatball sub. We all thought they were yummy, thanks for sharing.

well, since i am not a fan of ground turkey or meatballs, i wasn’t expecting to like these, but they were very good! i had to adjust the amounts since i always seem to have 20oz packages of turkey. this made 24 good sized meatballs. served with them with multi-grain pasta and sun-dried tomato sauce. thanks for a quick meal recipe!
