Description

An ‘Italian’ style sloppy joe with a base flavor of soffritto, mushrooms and tomato paste.

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 whole Medium Onion, Diced
  • 1 stalk Celery, Diced
  • 1 whole Carrot, Diced
  • 2 cloves Garlic, Minced
  • 1 pound Ground Turkey
  • 1 Tablespoon Worcestershire Sauce
  • 1 package 10 Ounce Cremini Mushrooms
  • 3 Tablespoons Tomato Paste
  • 2 sprigs Flat Parsley, Chopped
  • Salt And Pepper, to taste
  • 6 whole Rolls (Kaiser)

Preparation

In a large skillet on medium heat, add olive oil. When pan is hot, saute onion, celery, carrot and garlic for a few minutes until softened. Add ground turkey and cook until turkey is brown. Salt and pepper to taste. Remove to a bowl and keep warm.

Cook mushrooms in the same skillet until just tender, lightly salt and pepper to taste. Add cooked meat back into the skillet with tomato paste and parsley. Stir until the paste is well mixed.

Using a pointy serrated knife, cut the top off each roll to make it into the shape of a bowl. If the bread is doughy, remove some bread from the “bowl” and the “top”. Scoop meat sauce into each bowl, cover with the bread tops and enjoy!
