Description

My mom is a great cook. She’ll tell you she hates cooking but she really is good at it. She’s been making this lasagna as long as I can remember and for as many people as I can remember. Most people who have been to her house for dinner have had the awesome lasagna and it’s healthy! No, really! It is! It has turkey sausage and veggies!

Ingredients

  • FOR THE SAUCE:
  • 1 pound Ground Sweet Turkey Sausage
  • 1 whole Large Onion, Chopped
  • 1 whole Large Green Pepper, Chopped
  • 3 cans (14 Oz. Size) Diced Tomatoes
  • 2 cans (6 Oz. Size) Tomato Paste
  • 1 cup Water
  • 1 Tablespoon Sugar
  • 2 Tablespoons Parsley
  • 1 Tablespoon Basil
  • FOR THE ASSEMBLY:
  • 2-⅔ cups Cottage Cheese
  • 4 ounces, weight Shredded Parmesan Cheese
  • 1 Tablespoon Parsley
  • 1 Tablespoon Oregano
  • 1 whole Box Lasanga Noodles, 16 Ounce Box Cooked According To Package Instructions
  • 3 cups Mozzarella Cheese

Preparation

Brown turkey, onion and green pepper in a skillet over medium heat. Once turkey is browned, drain any excess grease. Add diced tomatoes with liquid, tomato paste, water, sugar, parsley and basil. Simmer for 30 minutes. Let cool slightly.

In a bowl, mix cottage cheese, Parmesan, parsley and oregano.

In a 9 x 13 pan, layer as follows: 1/4 of the sauce, 1/5 of the lasagna noodles, 1/3 of the cheese mixture and 1/5 of the lasagna noodles. Then layer again using the same ratios: more sauce, followed by the cheese mixture, then lasagna noodles. Then layer sauce and lasagna noodles. Top that with the cheese mixture, one last layer of lasagna noodles, followed by sauce. Top with mozzarella cheese.

Bake covered with a sheet of foil at 350ºF for 1 hour. Uncovered for the last 15 minutes.

Let sit 10-15 minutes before serving.
