Description

Here is my favourite lasagna recipe, made with healthy ground turkey and spinach.

Ingredients

  • 2 teaspoons Olive Oil
  • 10 ounces, weight Ground Turkey (or Extra-lean Ground Beef)
  • 1 whole Onion, Chopped
  • 1 clove Crushed Garlic
  • 1 can (14 Oz) Diced Tomatoes
  • 1 can 14 Oz. Crushed Tomatoes
  • ¼ cups Grated Parmesan Cheese
  • 1 teaspoon Oregano
  • 1 teaspoon Basil
  • ½ teaspoons Sugar
  • 2 cups Non Fat Cottage Cheese
  • 1 package (10 Oz) Frozen Spinach, Cooked And Drained
  • 12 whole No-boil Whole Wheat Lasagna Noodles
  • 1 cup Shredded Part-skim Mozzarella Cheese

Preparation

Preheat oven to 350F.

In a large nonstick saucepan or Dutch oven, heat oil. Add turkey, onion and garlic. Cook until turkey is brown and onion is soft, about 5 minutes. Stir in tomatoes, parmesan cheese, basil, oregano and sugar. Bring to boil, then reduce heat and simmer uncovered for 5 minutes.

Combine cottage cheese and spinach in a bowl.

Spoon 1/3 of sauce into bottom of 9×13″ baking dish, then top with 3 of the noodles. Spread with half of cottage cheese and spinach mixture, then top with 3 more noodles. Repeat layering once more, ending with sauce. Sprinkle with mozarella on top.

Bake, covered, for 1 hour. Uncover and bake for another 10 minutes. Let stand 10 minutes before serving.

This was good but I think it needs a bit more flavor. I upped the garlic but I think I’ll add fresh herbs next time when making the sauce. The best part was how easy it was to make! I made the night before and just popped in the oven the next day after work! Thanks for the recipe!

Very good and quick/easy-to-make lasagna. I like that it is lighter than the recipes with cream sauce and adds something green. :) Note to Self: Really really should drain the spinach beforehand next time! I am not the biggest fan of Cottage Cheese so I think I’ll use Ricotta next time – it was very good though. Thank you for sharing this recipe.
