1. Heat a large skillet over medium-high heat. Add turkey, pepper, and hot sauce. Cook about 6 to 7 minutes or until browned, stirring regularly and breaking up meat. Drain the fat from the pan, place cooked turkey on paper towels and set aside.
2. Return the skillet to medium-high heat, add the oil and onions, and cook, stirring continuously, until onions are translucent. Reduce heat, add beans, tomatoes, peppers and salt, and cook until peppers are soft, about 10 minutes. Add vinegar, mustard, cilantro, parsley, and cooked turkey; heat for 2 to 3 minutes more.
3. To build a burrito, place 1 tortilla on each of 4 serving plates. Divide turkey mixture evenly among tortillas. Top with sour cream and cheese, fold and enjoy.
