This dish was so easy and quick to whip up and it was delicious. If you don’t have quinoa, you definitely could use rice, couscous or even any pasta that you have on hand.
Cook quinoa according to package directions. In a skillet, heat olive oil. Saute onion, garlic and mushrooms until garlic starts to brown slightly.
Place raw spinach in pan and begin to saute. Cook until spinach is done, add salt and pepper and toss. Stir in tuna and cook over heat for just a few minutes to warm tuna. Combine with cooked quinoa and serve!
