Description

A good throw together pasta dish with fresh summery flavors!

Ingredients

  • 6 ounces, weight Pasta (preferably A Noodle Of Sorts)
  • ¾ cups Cherry Tomatoes, Chopped
  • ¾ cups Broccoli (fresh, Frozen, Whatever Works)
  • 4 ounces, weight Cooked Chicken, Diced
  • 1 teaspoon Minced Garlic
  • ¾ cups Pasta Sauce
  • Fresh Basil, To Taste
  • 2 ounces, weight Shredded Mozzarella Cheese
  • ¼ cups Seasoned Bread Crumbs

Preparation

Preheat oven to 350*

Cook pasta according to directions.

While the water is boiling, chop the tomatoes, broccoli and chicken.

Spray a pan with non stick cooking spray over medium heat. Add garlic and let simmer until it’s fragrant.

Reduce heat to medium-low and add tomatoes and broccoli. After about 3-4 minutes add the chicken and and 1/4 cup of pasta sauce. Let simmer over low heat while the pasta finishes.

Drain pasta. Add pasta and fresh basil to the skillet. In theory I suppose you could stop here…and it would still be delicious. But I’ve got a thing for baked pastas… the crispy edges and gooey cheesiness.

Spray a casserole dish with non stick cooking spray. Add 1/2 of the pasta mixture. Top with 1/2 cup sauce and 1 oz cheese. Add the rest of the pasta mixture. Top with remaining sauce, cheese and bread crumbs.

Bake in the oven until desired crispiness. 15 minutes should do the trick, but I took mine out after 10 minutes because I was hungry and getting impatient!
