Description

Tomato, basil and garlic pasta

Ingredients

  • 3 Tablespoons Olive Oil
  • ½ whole Red Onion, Finely Chopped
  • 1 Tablespoon Minced Garlic In Oil
  • 1 teaspoon Red Chili Flakes
  • 1 Tablespoon Ground Thyme
  • 1 Tablespoon Oregano
  • 12 ounces, weight Grape Tomatoes
  • 1 teaspoon Sugar
  • 1 pound Angel Hair Pasta
  • ¼ cups Grated Parmesan
  • ¼ cups Fresh Basil, Chiffonade

Preparation

Heat a large saute pan over medium high heat. Add the olive oil and warm it. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the spices and herbs and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly letting the flavors merge while you make the pasta.

Cook the pasta according to package instructions for al dente. Drain the pasta and add it into the sauce. Add the Parmesan and basil and toss well. Enjoy!
