Description

Quick and easy weeknight pasta.

Ingredients

  • 8 ounces, weight Whole Wheat Penne Pasta
  • 2 Tablespoons Olive Oil
  • 8 ounces, weight Ground Sausage
  • 1  Medium Onion, Sliced Vertically
  • 4 cloves Garlic, Minced
  • 1-¼ pound Diced Italian Style Tomatoes
  • 6 Tablespoons Grated Parmesan Cheese, Divided
  • ¼ teaspoons Salt
  • ⅛ teaspoons Black Pepper
  • ¼ cups Fresh Torn Basil Leaves

Preparation

Cook the pasta according to package directions but omit any salt the package may call for. Drain pasta and set aside.

Heat a large nonstick skillet over medium heat. Add oil to pan and coat. Add sausage and onion to pan and cook for about 4 minutes, or until onions start to soften and sausage begins to cook. Add garlic and cook an additional 2 minutes or until sausage is completely cooked through. Stir in tomatoes and cook an additional 2 minutes.

Remove from heat and stir in 2 tablespoons Parmesan cheese, salt and pepper. Sprinkle with the remaining Parmesan cheese and torn basil leaves.

When looking for a quick and easy pasta dish to serve with my pan-seared Salmon, I came across this dish. Although I did not prepare as written (because I didn’t have the sausage), it inspired me! I sauteed the onion and garlic in olive oil and tossed with Angel Hair pasta, 14oz can of diced tomatoes and 1/2 cup freshly grated parmesan cheese. Added salt and pepper and freshly torn basil leaves. Because I had a 1/2 jar of Vodka sauce in the fridge, I threw that in, too. Served in a pasta bowl and topped with pan-seared salmon. It was delicious! Thanks for the inspiration.
