Description

I made this recipe one day when I discovered a new spice – chipotle chili powder. I love the smoky flavor it brings out and so I add it to most everything these days. I made this recipe one day so I could use the grill and have easy cleanup. It turned out so moist and juicy. At first I made this with whole, sliced jalapenos and although I LOVED it, it turned out to be too spicy for my kids. So…I adjusted it to be not so hot.

Ingredients

  • 4 whole Thick Cut Pork Chops
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Cumin Powder
  • 2 teaspoons Chili Powder
  • 8 Tablespoons Tequila
  • 2 Tablespoons Honey
  • 2 whole Limes, Zest And Juice
  • 1 teaspoon Chipotle Chili Pepper
  • 2 Tablespoons Cilantro, Chopped
  • 2 whole Jalapeno, Seeded And Diced

Preparation

Preheat grill to medium-high heat.

In a small bowl combine garlic powder, cumin, chili powder, lime zest and chipotle chili powder: set aside. In another small bowl combine tequila, honey and lime juice.

Place a (12×18 inch) sheet of heavy-duty aluminum foil on a work surface and rub with oil or nonstick spray. Place one pork chop in the center of the foil and sprinkle with ¼ of the dry garlic powder/cumin mixture. Add ¼ of the liquid lime juice mixture, then top with ¼ of the cilantro and jalapeno. Bring up foil sides and double fold the top and ends to seal packet. Repeat to make four packets.

Grill 12-15 minutes, covered on the preheated grill.

Cut open foil packets and serve hot with a can of Bush’s Black Bean Fiesta Grillin Beans.

This sounds really good, mandg. Did you use bone-in or boneless pork chops? Or does it matter? Though I’m not very accomplished cooking on a grill, I’m going to try this. Thanks.
