Description

Enjoy this light and savory dish with rice and peas!

Ingredients

  • 2 whole 4 Oz Filets Of Tilapia
  • 1-½ Tablespoon Olive Oil
  • 1 clove Minced Garlic
  • 1 whole Minced Shallot
  • 1 whole Chopped Tomato
  • ⅛ cups White Cooking Wine
  • 1 Tablespoon Drained Capers
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper

Preparation

First preheat your broiler. Place the filets in a baking dish and brush both sides with olive oil and sprinkle with 1/8 teaspoon of salt and pepper each. Set aside for the moment.

In a saucepan, heat the remaining olive oil. Add the shallots and garlic to the pan once the oil is nice and hot. Saute for 3-4 minutes while stirring constantly. After sauteing the shallots and garlic, add the freshly chopped tomatoes and season with remaining salt/pepper or to taste. Pour in the 1/8 cup of wine, cover the pan and allow the wine to reduce for about 5 minutes.

At this time, place the tilapia in the oven to broil on the middle shelf for 7 minutes.

After reducing the wine, add in the capers and saute for an additional minute.

To serve this wonderfully light and tasty dish, place the broiled tilapia on the plate and spoon the Tomato-Caper sauce on top. Enjoy the fish along side some peas and rice!
