This will be the only roast chicken you will ever make after you taste its delightful flavor.
Preheat oven to 325 degrees.
Rinse chicken and pat dry. Season chicken with thyme, salt and pepper.
Put half the garlic cloves in the chicken. Put chicken on a rack in a roasting pan and pour the wine, broth and remaining half of garlic cloves in the bottom of the pan.
Occasionally dump out the juices in the chicken, being careful not to pour out the cloves.
Bake, basting every half hour for 2 hours or until juices run clear when pierced with a fork in the thigh/leg joint.
