Description

The perfect roast chicken is a recipe that all cooks should master! This recipe gives the chicken crispy and golden brown skin on the outside and juicy, tender meat on the inside!

Ingredients

  • 1 whole 5 Pound Roasting Chicken
  • 1 whole Lemon, Quartered
  • 5 cloves Garlic, Peeled
  • 5 sprigs Thyme
  • 2 Tablespoons Unsalted Butter, melted
  • 2 whole Onions, Thickly Sliced
  • 2 whole Carrots, Thickly Sliced
  • 2 stalks Celery, Thickly Sliced
  • Kosher Salt
  • Freshly Ground Black Pepper

Preparation

Let the chicken rest at room temperature for 30 minutes. Preheat the oven to 425 F.

Remove the giblets and any excess fat from the chicken cavity. Rinse the inside and outside of the chicken under cold water, pat dry with paper towels.

Sprinkle the inside of the chicken cavity with salt and pepper. Stuff the cavity with the lemon quarters, garlic, and thyme. With a basting brush, brush the whole chicken with the melted butter. Sprinkle liberally with salt and pepper. Using kitchen twine, tie the chicken legs together and tuck the wings under.

Layer the bottom of a roasting pan with the sliced onions, carrots, and celery. Place the chicken on the bed of vegetables, breast side up.

Put the pan into the preheated oven and roast the chicken until the skin is golden brown and crisp, and the juices run clear. A thermometer inserted into the thickest part of the leg should read 160 F. This should take about 1 1/2 hours. Remove from the oven and let it rest for 15 minutes before carving.

Do you keep the oven temp at 425 the entire time?

Fantastic roast chicken! I used 1/2 stick butter and dried thyme since that was what I had on hand, and like the previous reviewer added potatoes and a little EVOO to the veggies. It was delicious. Use extra veggies if you have them, because they are wonderful sitting in all the juices. Yum! A hit with the hubby and my two small kids.

The chicken turned out perfectly after cooking for exactly an hour and a half. I tossed the vegetables with a little olive oil along with the salt and pepper and added potatoes. I would add more of the vegetables and potatoes than the recipe has listed as they turn out so good. This chicken is so easy to make and is elegant for guests. Thanks for the fantastic recipe!
