Description

Better known as a Turkey Club with White Bean Dijon Spread this sandwich has ingredients known around the world.

Ingredients

  • FOR THE SPREAD:
  • ¼ cups Canned White Beans, Rinsed And Drained
  • 1 dash Olive Oil
  • ⅛ teaspoons Dijon Mustard
  • 3 drops Lemon Juice
  • 1 dash Garlic Powder
  • 1 pinch Salt
  • 1 pinch Pepper
  • FOR THE SANDWICH ASSEMBLY:
  • ½ whole Avocado (peeled, Pitted And Sliced)
  • ¼ cups Spinach, Chopped
  • 2 slices Smoked Turkey Breast
  • ¼ cups Alfalfa Sprouts
  • 2 slices Sandwich Bread

Preparation

1. Make the white bean and Dijon spread. First, place the beans in a small food processor and grind them slightly. Next, add the olive oil, mustard, and lemon juice and blend. The end result shouldn’t be smooth like butter but it should have a spreadable consistency. Add garlic powder, salt and pepper to taste. Set aside.
2. Slice avocado and chop spinach leaves. While doing this, lightly toast bread in a convection oven or toaster on the lowest setting (I enjoy using my George Forman grill press). Toast until you reach your desired level of brown.
3. Next comes the placement. Coat the bottom layer of bread with the bean spread. Next, put on half the spinach, layered with half the bean sprouts and avocado. Place slices of turkey in the center. Top with remaining avocado, bean sprouts, and bread. Enjoy!
