Description

What’s better than a Cobb Salad? A Cobb Salad on toasty bread.

Ingredients

  • 1 loaf Ciabatta Bread, Split Lengthwise
  • 1 whole Bonless, Skinless Chicken Breast
  • 6 slices Ready-to-eat Bacon, Cut In Half
  • ¼ cups Crumbled Bleu Cheese
  • 2 whole Boiled Eggs, Sliced
  • 1 whole Tomato, Sliced Thin
  • 2 whole Romaine Lettuce Leaves, Shredded
  • 1 whole Avocado, Pitted And Smashed
  • Olive Oil

Preparation

Layer chicken, bacon slices and crumbled bleu cheese onto the bottom slice of a ciabatta. Brush the top ciabatta slice with olive oil. Place it all under the broiler for a few minutes or until the cheese is melted and the bread is starting to toast.

Smear avocado onto the top slice of bread, layer on tomato slices. Over the melted bleu cheese, layer boiled egg slices and shredded lettuce.

Carefully combine the two slices of sandwich and cut into 4 pieces.

DELICIOUS! I marinated by bag of frozen breasts late Sunday evening and left them overnight. Grilled all of the them Monday evening and made the Cobbwich for dinner for myself and two daughters! I thought they were going to like their plates! It was truly scrumptious! Thanks so much for sharing!!
