Super moist and so flavorful, these can be made in less time than it will take you to watch an episode of The Office.
Crack eggs into a bowl and whisk vigorously.
Throw in the ground meat.
Add bread crumbs, cheese, salt and pepper.
Finely chop garlic and onions and add to the bowl.
And now the fun part: Dig in. Squish it, mix it; do whatever you have to do to get it all mashed together
With a cookie scooper, scoop out portions of the meat mixture, roll into beautifully formed balls and put them on a plate. (I got 50 meatballs out of 2 pounds of ground beef. You may want more or less depending on the size that you prefer.)
Place about half of meatballs into a pot of boiling water. Boil for about 5 minutes then retrieve with a slotted spoon and set aside. Note: you will lose some of the onions doing it this way (you can also roll them in flour and saute them in oil).
When done boiling all of the meatballs, let cool for a bit, stick in a few bags and throw in the freezer. Or eat them plain. Or add them to a sauce. You decide.

I’ve been looking for a meatball recipe that makes softer meatballs for my toddlers. I never thought of boiling them. This looks great! Thanks!

I make meatballs almost exactly the same way, however I bake them instead of boiling them. I’ll have to give this a try! thanks!
