Description

I’m sure everyone has his own favorite lasagna recipe, but I’d just like to offer that this really is The Best Lasagna Ever. Part of its appeal is that the ingredients used are totally basic. Anyone can make this, anywhere, anytime. And it’s the easiest thing in the world. Aside from the simplicity and availability of ingredients, however, this lasagna is just dadgum good.

Ingredients

  • 1-½ pound Ground Beef
  • 1 pound Hot Breakfast Sausage
  • 2 cloves Garlic, Minced
  • 2 cans (14.5 Ounce) Whole Tomatoes
  • 2 cans (6 Ounce) Tomato Paste
  • 2 Tablespoons Dried Parsley
  • 2 Tablespoons Dried Basil
  • 1 teaspoon Salt
  • 3 cups Lowfat Cottage Cheese
  • 2 whole Beaten Eggs
  • ½ cups Grated (not Shredded) Parmesan Cheese
  • 2 Tablespoons Dried Parsley
  • 1 teaspoon Salt
  • 1 pound Sliced Mozzarella Cheese
  • 1 package (10 Ounce) Lasagna Noodles
  • (add 1/2 Teaspoon Salt And 1 Tablespoon Olive Oil To Pasta Water)

Preparation

Bring a large pot of water to a boil.

Meanwhile, in a large skillet or saucepan, combine ground beef, sausage, and garlic. Cook over medium-high heat until browned. Drain half the fat; less if you’re feeling naughty. Add tomatoes, tomato paste, 2 tablespoons parsley, basil and salt. After adding the tomatoes, the sauce mixture should simmer for 45 minutes while you are working on the other steps.

In a medium bowl, mix cottage cheese, beaten eggs, grated Parmesan, 2 more tablespoons parsley, and 1 more teaspoon salt. Stir together well. Set aside. Cook lasagna until “al dente” (not overly cooked).

To assemble:
Arrange 4 cooked lasagna noodles in the bottom of a baking pan, overlapping if necessary. Spoon half the cottage cheese mixture over the noodles. Spread evenly. Cover cottage cheese with a layer of mozzarella cheese. Spoon a little less than half the meat/sauce mixture over the top.

Repeat, ending with meat/sauce mixture. Sprinkle top generously with extra Parmesan.

Either freeze, refrigerate for up to two days, or bake immediately: 350-degree oven for 20 to 30 minutes, or until top is hot and bubbly.

Making this tonight. I have never used Hot Breakfast Sausage, and wondering if it will be too spicy for my family. Anyone?

my husband made this and it is very very good but I couldn’t get over how it was a italian dish with NO Onions.. I think maybe adding some gr pepper would be tasty too ..not that it needs anything more just saying if you wanted to :).

Okay, I confess, it beats my mom’s . . . and I thought hers was the best. Husband was licking the pan when it was gone. Really fabulous (despite the cottage cheese – yuck!)

This is now my “go-to” lasagna recipe! Made it for my boyfriend and he raved and kept all the leftovers for himself. Wonderful flavor and exceptionally easy!!! Definitely a crowd-pleaser.

I have made this recipe SO MANY times now, it’s crazy! It’s definitely my go-to recipe for lasagna now. I’ve made it exactly like the recipe, and it’s fantastic. I also modify it sometimes by substituting the whole tomatoes for crushed tomatoes and I sub the the cottage cheese/egg mixture for a container of ricotta (I still add the parmesan and parsley to the ricotta though). I also lower the salt content due to our preference. It’s really a great recipe as written, but it’s also easy enough to modify to fit your family!

I prepped this last night and threw it in the oven tonight and it was DELICIOUS!!! I made a couple of mods, strictly out of necessity (necessity being that I had these things in my pantry already and wanted to get rid of them) – crushed tomatoes in place of whole, tomato sauce in place of tomato paste. To combat runniness, I used a slotted spoon when putting the meat mixture in the casserole dish and took a little of the liquid out. Like I said, though, it was delish! Very easy and the mixture of hamburger and sausage was spot-on. I will make this again for sure – the fiance wholeheartedly approved. All the ratios were perfect – meat to cottage-cheese-mixture to noodles to cheese… All of it was perfect.

I fell in love with this Lasagna the first time I made it. Since then I have not been able to eat any lasagna that I thought came close to this, even at Italian Restaurants. We had this at our last potluck and everyone fell in love with it.
