Thai Peanut Chicken Skewers

Description

Marinated chicken is grilled on skewers and served with a spicy Thai peanut dipping sauce. Great for summery appetizers or a light meal. It goes well with rice noodles or rice. Enjoy!

Ingredients

  • 2 pounds Chicken Sliced Thin Into Strips
  • 4 whole Scallions Sliced Thin
  • 1 bunch Fresh Cilantro, Chopped
  • 2 cloves Minced Garlic
  • ⅓ cups Soy Sauce
  • ⅓ cups Vegetable Oil
  • ⅓ cups Brown Sugar
  • 4 Tablespoons Ketchup
  • 1-½ teaspoon Tabasco Sauce
  • 4 Tablespoons Lime Juice
  • 2 Tablespoons Ketchup
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Brown Sugar
  • 1 Tablespoon Chopped Fresh Cilantro
  • 1 whole Scallion Diced
  • 1 teaspoon Tabasco Sauce
  • 1 clove Minced Garlic
  • ½ cups Chunky Peanut Butter
  • ¼ cups Hot Water

Preparation

Combine first nine ingredients together and put in a zip-lock bag toss to make sure your chicken is covered well with the marinade. Refrigerate for about 45 minutes to an hour.

After chicken is marinaded, place on skewers, weaving the chicken as you skewer it. You can fit about 4 to 5 pieces of chicken on each skewer. (If you are using bamboo skewers make sure to soak them before using them) Grill for about 8 minutes on each side.

While chicken is grilling, combine the next 8 ingredients to make the sauce.

After these ingredients are mixed together add the peanut butter and hot water. Whisk together until smooth.
