Description

Friends and family always request that I make this recipe! My nephew will even eat spinach if it’s in these calzones! I highly suggest using my Wheat & Honey Pizza Crust recipe which you’ll find by checking my Recipe Box.

Ingredients

  • 1 whole Wheat & Honey Pizza Crust Dough Or Store Bought, Divided Into 10 Pieces, Rolled Thin
  • _____
  • FOR THE MARINADE:
  • ¼ cups Lemon Juice
  • 2 Tablespoons Red Pepper Flakes
  • 3 Tablespoons Fresh Cilantro, Chopped
  • 16 ounces, weight Boneless, Skinless Chicken Breast (~4 Breasts), Marinated, Grilled Or Baked, Cut Into 1/2 Inch Cubes

  • FOR THE CALZONE FILLING:
  • 3 cups Spinach Leaves, Shredded
  • ½ cups Fresh Cilantro Leaves
  • ¾ cups Shredded Carrots
  • ¾ cups Part-Skim Shredded Mozzarella Cheese

  • FOR THE PEANUT SAUCE:
  • ¼ cups Reduced-Fat Peanut Butter
  • 2 teaspoons Sesame Oil
  • 10 ounces, fluid Lite Coconut Milk
  • 1-½ Tablespoon Lite Soy Sauce
  • 1 Tablespoon Garlic Powder
  • 2 teaspoons Hot Chili Sauce (Thai)
  • 2 teaspoons Brown Sugar
  • 2 teaspoons Red Pepper Flakes
  • 3 Tablespoons Lime Juice
  • 4 ounces, fluid Skim Milk

Preparation

Marinate chicken breasts in the marinade ingredients for 1-3 hours prior to cooking. Bake or grill chicken breasts until internal temperature has reached 150-160 degrees (approximately 25 minutes). Cube cooked chicken into 1/2″ pieces.

Roll each dough piece into a ball, then using a rolling pin roll out into a thin 8″ circle.

Preheat oven to 425 degrees (F). Combine cooked chicken pieces, spinach, cilantro, shredded carrot, and shredded cheese. On each rolled-out dough circle, add approximately 1/2 cup chicken mixture. Lightly brush water to the edge of the circle. Fold dough over and pinch edges to seal. Lay calzones on a baking sheet (or 2) sprayed lightly with cooking spray. Bake for 15-20 minutes on middle rack, or until crust is lightly brown.

Combine peanut sauce ingredients in a large saucepan over low heat. Simmer, stirring frequently, for approximately 10-15 minutes while calzones are baking.

To serve: ladle 1/4 cup peanut sauce onto the top of each calzone. Enjoy!
