Description

Ground Turkey Sloppy Joes, topped off with pickled jalapenos, sliced avocado and purple onions. A totally grown up version of a classic recipe.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 whole Onion, Diced
  • 5 cloves Garlic, Minced
  • 1 pound Ground Turkey Breast
  • 1 can 15 Oz Can, Tomato Sauce, No Salt Added
  • 1 can (4 Oz. Can) Diced Green Chilis
  • 1 cup Chicken Stock (low Sodium)
  • 1 teaspoon EACH: Pepper, Garlic Salt, Garlic Powder, Smoked Paprika
  • 1 Tablespoon Chili Powder
  • 2 dashes Hot Sauce
  • 2 whole Carrots, Diced
  • 2 stalks Celery, Diced
  • 1 whole Orange Bell Pepper, Stem And Seeds Removed, Diced
  • 1 whole Avocado (peeled, Pitted And Sliced)
  • ½ cups Purple Onion, Sliced
  • 1 cup Pickled Jalapeno Slices
  • 8 whole Whole Wheat Buns, Toasted

Preparation

In a large cast iron skillet, over medium high heat add oil, onions, and garlic. Let the mixture bloom 2 minutes. Add in ground turkey, and cook until browned. Once browned add in tomato sauce, green chilies, chicken stock, and add in all spices (pepper through chili powder). Taste and adjust seasoning as needed. Add in a few shakes hot sauce if desired. Stir well to combine.

Cover, and simmer for 10 minutes.

Now add in carrots, celery, and orange pepper. Let this come to a simmer and simmer for another 15 minutes, or until liquid is pretty much absorbed.

To serve: If desired toast buns. Add turkey mixture to bottom half of bun, top with diced purple onions, avocado slices, and pickled jalapenos. Place top half of bun on sandwich and enjoy!
