Description

Super easy Teriyaki Beef Meatballs. Serve as an appetizer or add rice to make it a meal. Ready in less than 30 minutes!

Ingredients

  • FOR THE MEATBALLS:
  • 1 pound Lean Ground Beef
  • ¼ cups Panko Breadcrumbs
  • 1 whole Egg
  • ⅛ teaspoons Pepper
  • ¼ teaspoons Salt
  • 1 Tablespoon Green Onion, Sliced Plus Extra For Garnish
  • ½ teaspoons Ginger, Minced
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Vegetable Oil
  • Sesame Seeds, Optional Garnish
  • FOR THE TERIYAKI SAUCE:
  • 1 Tablespoon Vegetable Oil
  • 1 clove Garlic, Minced
  • ¼ cups Soy Sauce
  • 2 Tablespoons Water
  • 1 Tablespoon Light Brown Sugar
  • ½ teaspoons Ginger, Minced
  • 1 teaspoon Cornstarch
  • 1 Tablespoon Water

Preparation

For the meatballs:
Add ground beef, panko, egg, pepper, salt, onion, ginger and garlic into a large mixing bowl. Mix with your hands or with a spoon until combined. Roll into 12 meatballs.

Heat a skillet over medium-high heat with the oil. Add the meatballs and saute until fully cooked and browned on all sides, 8-10 minutes.

Once meatballs are cooked add them to the teriyaki sauce. Coat the meatballs in the sauce and allow them to simmer for 1-2 minutes.

Serve the meatballs immediately with rice or by itself as an appetizer. Garnish with extra green onions and sesame seeds if desired.

For the teriyaki sauce:
Add oil and garlic into a medium saucepan over medium heat. Cook for 1 minute. Add soy sauce, water, brown sugar and ginger. Bring to a simmer and cook for 2 minutes.

In a small bowl mix together the cornstarch and water until combined. Add this to the teryaki sauce. Cook sauce until thickened. The sauce should be thick enough to coat the back of the spoon. Keep on low heat until you are ready to toss with the meatballs.

These were delicious! I used ~1.5 lb. of ground beef I had in the freezer and may have been a little heavy-handed with the ginger and garlic since I was concerned they wouldn’t be very flavorful, but it all worked out. I baked the meatballs in a 400F oven for about 15 minutes, flipping halfway through. (I try not to fry in oil if I can help it.) I transferred the hot meatballs to a serving dish and spooned the teriyaki sauce on top. Perfect! What a tasty twist on your typical Italian meatballs. We enjoyed them for dinner with our usual pile of roasted vegetables, and my husband has leftovers for lunch. Thumbs up from both of us! Thanks for sharing.
