Description

Fire up your grill with wild blue shrimp marinated in tequila and lime juice, placed in a flour tortilla and topped with a tequila lime yogurt dressing.

Ingredients

  • FOR THE SHRIMP:
  • 1 ounce, fluid Tequila
  • 3 Tablespoons Lime Juice
  • 2 teaspoons Garlic, Minced
  • 1 dash Black Pepper
  • ½ teaspoons Red Pepper Chili Flakes
  • 2 Tablespoons Parsley
  • 1 pound Wild Blue Shrimp Or Raw Shrimp, Devained, Tail Off Un-cooked
  • FOR THE TACOS:
  • 8 whole Flour Tortillas
  • ½ cups Romaine Lettuce, Shredded
  • ½ cups Tomatoes, Diced
  • FOR THE TEQUILA LIME YOGURT DRESSING:
  • ½ cups Greek Yogurt, Plain
  • ¼ teaspoons Tequila
  • ¼ teaspoons Lime Juice
  • ¼ teaspoons Garlic Powder
  • ¼ teaspoons Chili Powder
  • ¼ teaspoons Juice From Chipotle Chiles In Adobo
  • 1 teaspoon Cilantro (optional)

Preparation

For the shrimp, in a bowl add tequila, lime juice, garlic, black pepper, red pepper chili flakes and parsley. Mix until combined. In a plastic bag or bowl, add the shrimp and the marinade. Place in the fridge for at least 1 hour or up to 24 hours.

Drain marinade and place the shrimp on skewers and place on a hot grill. Cook for about 2-3 minutes per side. Watch the shrimp; when they turn pink, they’re done!

To assemble tacos, on a flour tortilla, add lettuce, shrimp, tomatoes and a 1 tablespoon tequila lime yogurt dressing.

To make the dressing, in a small bowl, combine the Greek yogurt, tequila, lime juice, garlic powder, chili powder, juice from chipotle chilies in adobo sauce, and cilantro, if using.
