Description

Salmon in a grapefruit marinade baked in a foil “tent”. It’s quick, easy, and delicious!

Ingredients

  • 2 whole Salmon Fillets (6 Ounce Size)
  • 2 Tablespoons Soy Sauce
  • ¼ cups Water
  • 2 Tablespoons Brown Sugar
  • 2 teaspoons Diced Ginger Root
  • 2 teaspoons Diced Onion
  • 1 clove Diced Garlic
  • ¾ teaspoons Red Pepper Flakes
  • ½ Tablespoons Ground Pepper
  • 1 whole Grapefruit
  • ¼ teaspoons Fresh Or Dried Parsley For Garnish

Preparation

Preheat oven to 350 degrees F.

In a bowl, combine the soy sauce, water and brown sugar.

Peel and dice the ginger root. Dice the onions and the garlic. Add the ginger root, onions and garlic to the soy sauce mixture. Add the red pepper flakes, and ground pepper to the soy sauce mixture.

Squeeze the juice from the grapefruit into the soy sauce mixture and stir all ingredients together to make the marinade.

Lay a large piece of foil on a cookie sheet or pizza pan (make sure there is plenty of overhang so that you can fold and tent the salmon with it. Lay the pieces of salmon on the foil. Pour the marinade over the salmon making sure that it stays on the foil.

Pull all of the sides of the foil up together to make a tent and roll the top edges tightly together to seal the “tent”.

Bake salmon in the preheated oven for about 10 minutes.

Salt to taste and serve over rice. Garnish with dried or fresh parsley.
