We all need recipes that can pull double duty. Whether they use up leftovers or create them. This one however, will never disappoint. Not exactly Chicken Divan but something even better!

Eggplant in enchiladas? Oh yeah! This is a healthy take on a traditionally heavy Mexican dish. A cream made of pepitas replaces the usual cheese and makes this a totally satisfying vegan dish. Don’t be scared off by the prep time, most of that is in the soaking of the pepitas. Once you try this dish you’ll be wondering where these enchiladas have been all your life!

I couldn’t find a casserole recipe I liked, so I took ideas from a bunch of different recipes and created this.

Cauliflower and Italian sausage come together with just a few ingredients for a filling and healthy one-pot dinner everyone will love! Suitable for paleo and gluten-free diets as long as the sausage meets those requirements.

Ratatouille is not only a great movie but a healthy and delicious dish that anyone can make at home!

Her enviable TK recipe box is a testament to that. Go see for yourself!

This is a fabulous recipe that cooks up wonderfully! I cooked it in advance too serve for dinner later in the week, but my husband ate almost half the pan before I could wrap it up. Very tasty, next time I’ll add a bit of red pepper flakes or jalapenos for some additional spice.

this is very good! Easy and kid friendly. i sauteed sliced mushrooms with the onions and used cream of mushroom soup instead of the celery or chicken. i also salt and peppered right before i added the cheese. Thanks for this recipe!

Yummy! I substituted and used ground turkey, 98% FF cream of mushroom, and reduced fat cheese. Still delicious!

I added celery with the onions and used cream of mushroom soup. It was delicious. This is definitely going to become a regular meal for us. I also added enough tater tots to cover the whole top of the casserole because 16oz just wasn’t enough.
