These are super good, hard shell tacos.
Clean the onion and the garlic cloves. In a pot, add the chicken, garlic cloves and onion (cut in half) and cover with water. Bring to a boil, skim off the foam and add salt. When chicken is done, remove the pot from the pan, remove the chicken from the pot, let cool slightly and then use a fork to shred. ( discard onion and garlic).
Heat the tortillas in the microwave covered with a damp paper towel. I do 10 at a time for 1-2 minutes. They will be hot so please be careful. Place a bit of shredded chicken in center and roll to form a cigar shape.
Once you have finished forming your tacos heat the oil in a skillet, fry them until golden brown, drain on paper towels and enjoy. These are great covered with green salsa and a dollup of sour cream. See my TastyKitchen recipe box for my “Green Chili Sauce” recipe.
