Description

I love caramelized onions. They just brighten every dish they are in. Here is a favorite way I use them. The pork absorbs the wonderful flavor and become so juicy and delicious! It may look like a lot of onions, but they do cook down, and you’ll be glad you have lots!

Ingredients

  • 3-4 Tablespoons Olive Oil
  • 4 Large Sweet Onions (Vidalia, If Possible), Cut Into Thick Slices
  • 1/2 Teaspoon Freshly Ground Pepper
  • 1/4 Cup Brown Sugar
  • 1/4 Cup Apple Cider Vinegar
  • 4-6 Boneless Smoked Pork Chops

Preparation

In a large skillet, add onion slices and sprinkle with pepper. Cook onions over medium heat, stirring frequently, about 15-20 minutes, until golden and caramelized. (If skillet is large enough, push onions to the side, or else remove them until pork chops are in place.)

Add boneless smoked pork chops to skillet. Heat for one minute on each side over medium heat. Place onions over chops. Mix together in a small bowl the brown sugar and vinegar, and drizzle over onions. Simmer about 10 minutes, stirring frequently, until sugar is dissolved, onions are well coated with sauce, and dish is bubbly hot.

NOTE: You may use the pork chops of your choice. Cook until pork is thoroughly cooked. I use smoked chops for ease and convenience.

These were fantastic! I didn’t have apple cider vinegar, so used apple juice and regular white vinegar. Still a hit!!!

Loved this! We loved the onion, cider, brown sugar combo. My husband said these were some of the best pork chops he has ever eaten.

This was great, I subed (I can’t spell today) the Apple Cider Vinegar for Simply Apple. I have to say these were the moistest chops I’ve ever made and these days it’s hard to make pork chops that are not dry; I just used regular boneless chops and cooke for about 20 mins. As soon I figure it out, I will give it 5 mitts, cuz it was so darn moist.
