Description

Sloppy Joes meet tacos in this easy family-pleasing meal! Get your bibs ready!

Ingredients

  • 1 pound Ground Turkey
  • 1 can (14 1/2 Oz. Size) Pinto Beans, Rinsed And Drained
  • 1 clove Garlic, Minced
  • 2 teaspoons Chili Powder
  • 1 teaspoon Oregano
  • ½ teaspoons Cumin
  • ½ teaspoons Salt
  • ¼ cups Chicken Broth
  • 1 cup Salsa ( I Used Frontera Chipotle Salsa)
  • 4 whole Hamburger Buns
  • 1 cup Corn Kernels
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Lettuce
  • ½ cups Diced Tomatoes
  • 1 whole Avocado, Peeled, Pitted, And Diced

Preparation

Heat a large skillet over medium heat. Add ground turkey. Cook ground turkey until it has browned, crumbling as it cooks. Stir in beans. Add garlic, chili powder, oregano, cumin and salt. Stir. Add broth and salsa. Reduce heat and cook for 10-15 minutes or until mixture has thickened.

Split each hamburger bun. Top the bottom of each bun with 1/4 of the turkey mixture, corn, cheese, lettuce, tomatoes and avocado. Add the top of the bun and serve.
