Lettuce sprinkled on top of pasta? Sounds weird, right? But it works and it’s delicious! This is the perfect middle-of-the-work-week dinner! Inexpensive (only about $15), easy to make, only dirties 2 pots, feeds at least 6, and is packed with flavor!
In a large skillet, brown ground beef and drain grease. Add the packs of taco seasoning and tomato sauce, paste and stir. Add green peppers, onion, garlic and tomatoes (drained). Stir and let simmer for 10 minutes or until veggies soften.
While simmering, boil water for pasta, and cook per directions on box. Once pasta is drained, return pasta to same pot and add ground beef mixture. Stir to coat pasta.
Shred or slice the iceberg lettuce really thin. Serve pasta topped with a sprinkle of cheese and lettuce.
