Description

A layered taco-licious dinner you can make in a jiffy, or make ahead!

Ingredients

  • Olive Oil
  • 1 whole Onion, Chopped
  • 1 whole Small Bell Pepper, Chopped
  • 1-½ pound Ground Turkey Or Beef
  • 1 can (15 Oz. Can) Black Beans
  • 1 cup Corn
  • 1 clove Garlic, Minced
  • 1 can (10 Oz. Can) Tomatoes With Green Chilies (Rotel)
  • 1 can (6 Oz. Can) Tomato Paste
  • 1 cup Water
  • 2 teaspoons Chili Powder
  • 1-½ teaspoon Ground Cumin
  • 1 pinch Dry Oregano, Crushed
  • 1 pinch Red Pepper Flake (Optional)
  • 9 whole Soft Tortillas (flour Or Corn, Both Work Well Here)
  • 2 cups Shredded Cheese - Cheddar, Colby Jack

Preparation

Heat olive oil in a large skillet, cook onion and bell pepper until they just begin to soften. Add ground turkey (or beef) and cook until just done. Mix in the drained and rinsed black beans, corn, garlic, tomato products, water and spices. Stir well. Allow mixture to come to a boil then reduce heat and simmer while you prepare a 9×13 pan.

Oil the bottom and sides of the pan, place 2 to 3 tortillas in the bottom of the pan (try to cover as much area as possible; overlapping tortillas is fine) and spoon 1/2 of the meat mixture over the tortillas. Top with 1/3 of the cheese, place 2 to 3 tortillas over this and repeat the meat and cheese layer. Top with the final 2 to 3 tortillas and the remainder of the cheese.

Place into a 350ºF oven for 10–15 minutes or until cheese is completely melted and tortillas are beginning to brown on the edges.

Serve with your favorite taco toppings: salsa, sour cream, olives, chopped green onion, lettuce, etc.
