A quick and yummy weeknight meal. Spiced chicken sauteed with peppers and onions served over brown rice and avocado. Healthy and delicious!
1. Slice bell peppers and onion into strips.
2. Saute peppers and onions in until soft, about 5-10 minutes. Add half of the package of taco seasoning. Saute for another minute or so. Add chicken broth and simmer on low.
3. While peppers and onions are cooking, take chicken off the bone and shred. Add chicken and remaining taco seasoning to the peppers and onions. Simmer for about 10 minutes.
4. Cut avocado into chunks and mix with lime juice.
5. Serve chicken, peppers, and onions over brown rice. Top with avocado and lime. Enjoy!
