Description

All the fixins of a taco, but in a cute little edible bowl!

Ingredients

  • 8 whole 6 Inch Flour Tortillas
  • 1 pound Ground Turkey
  • 2 Tablespoons Taco Seasoning
  • 1 can (15 Oz. Size) Corn With Red And Green Peppers, Drained
  • ½ cups Refried Beans
  • 1 cup Salsa, If Desired
  • 1 cup Cheese, If Desired
  • 1 cup Sour Cream, If Desired

Preparation

1. Preheat oven to 350 degrees F.

2. Microwave the tortillas for 30 seconds. Line each of 8 muffin cups with 1 tortilla, carefully folding back the edges, leaving an opening in the center for the filling.

3. Bake the empty tortilla for 10 minutes. Meanwhile, brown the ground turkey in a large skillet over medium heat with the taco seasoning and about 1/4 cup water. Once the meat is browned, add the corn and simmer until corn is heated through.

4. Spoon about 1 Tablespoon of refried beans into the bottom of your tortilla cup, and top with meat mixture. Spoon cheese, salsa, and sour cream on top, if desired. And devour!

What a fun recipe! Saving this one for a “what a day!” dinner, when something quick and whimsical is just right for supper. :)

Works great and is sooo Cute!! After I was done I broke it apart and ate it like chips! No salty at all!
