Description

These Sweet Potato Tuna Patties are very soft inside and crisp on the outside. It is a delicious, easy, quick and healthy appetizer recipe!

Ingredients

  • 2  Medium-sized Sweet Potatoes, Peeled And Sliced Into Chunks
  • 2 cans (180 Gram Size) Chunked Tuna In Water, Drained And Flaked
  • ½ cups Chopped Green Onions
  • ½ cups Gluten-free Breadcrumbs
  • 2 whole Eggs
  • ½ cups Diced Red Onions
  • 1-½ cup Diced Yellow Pepper
  • ½ teaspoons Garlic Powder
  • ¼ teaspoons Chili Pepper
  • Salt And Pepper For Taste
  • Olive Oil Cooking Spray

Preparation

Fill a medium pan halfway full of water. Bring water to a boil and add sweet potatoes. Cook them for about 10-15 minutes or until tender. Drain and run them under cold running water. Transfer to a large bowl and mash with a fork.

Add the tuna, green onions, breadcrumbs, eggs, red onions, yellow pepper, garlic powder, chili pepper, salt and pepper. Mix well until the all ingredients are combined. Use your hands to shape mixture into your preferred size patties.

Heat a non-stick frying pan over medium-high heat and add cooking spray. Cook patties for 3 minutes per side or until golden brown.

Great flavor! I decided to make these for dinner, so I did four large patties. I also had some leftover celery and a green pepper, so I added that to the red onion and yellow pepper. I sauteed those veggies until softened before adding them to my mashed (baked – I avoid boiling if possible) sweet potato, tuna, and the rest (only one egg since the mixture was already pretty wet). Then I baked the patties at 400F for about 15 minutes, flipping once. They weren’t crispy on the outside, but they were hot all the way through and tasted scrumptious with a melted slice of smoked Gouda on top. My boyfriend is looking forward to two days of leftovers for lunch. Thanks for sharing!
