Description

Tasty corn fritters that are baked and not fried!

Ingredients

  • 4 ears Corn
  • 1  Onion
  • 4 cloves Garlic
  • 1  Jalapeno, Divided
  • 1 Tablespoon Black Pepper
  • 2  Eggs, Lightly Beaten
  • ½ cups Whole Wheat Flour
  • ½ cups Whole Wheat Breadcrumbs
  • 3 Tablespoons Extra Virgin Olive Oil
  • 1  Avocado, Pitted And Diced
  • 4 Tablespoons Fresh Cilantro, Divided
  • ½  Lime, Juiced
  • Sriracha Sauce (optional)

Preparation

1. Preheat oven to 350ºF.
2. Cut kernels from fresh raw corn (do this in a bowl as they will go everywhere).
3. Mix corn kernels, onion, garlic, 1/2 jalapeno, and black pepper in a mixing bowl.
4. Mix in beaten egg and flour, mix thoroughly.
5. Take 2 tablespoons of corn mix and mould into a fritter.
6. Dust lightly with breadcrumbs.
7. In a cast iron skillet, heat 1 tablespoon olive oil on medium heat.
8. Cook corn fritters in the skillet, 3 minutes on each side.
9. Between batches, wipe skillet with a paper towel and add 1 tablespoon new olive oil.
10. After cooking all fritters, transfer to the oven and bake for 10 minutes.
11. Mix chopped avocado, 2 tablespoons cilantro, the remaining 1/2 jalapeno and lime juice.
12. Serve fritters hot topped with avocado mixture and garnished with remaining cilantro. Serve with sriracha if desired.

What a great alternative idea for using the frozen sweet corn in my freezer. However, I think mine turned out a little too dry and next time I’d try to make some adjustments.
