Description

Grilled bacon-wrapped chicken breast stuffed with a mixture of asiago cheese, blue cheese crumbles, bell pepper, and a secret ingredient.

Ingredients

  • ¼ cups Diced Bell Pepper
  • 1-¼ cup Asiago Cheese, Freshly Grated
  • ½ cups Blue Cheese Crumbles
  • ⅓ cups Brown Sugar
  • 3 whole Chicken Breasts
  • ½ teaspoons Chili Powder
  • 1 pound Thick Cut Bacon
  • ½ teaspoons Blended Seasoning
  • 1 cup Barbeque Sauce

Preparation

Dice the bell pepper and grate the asiago cheese. Add bell pepper, asiago cheese, blue cheese crumbles and brown sugar into a small mixing bowl. Cut through the mixture to blend ingredients to an even consistency. Set aside.

Chicken breast preparation: insert knife into the large end of the breast, cutting it to open a pocket as large as possible. Take care to not cut through the breast. Completely stuff the pockets with the cheese mixture divided between the 3 breasts. Sprinkle stuffed breasts with chili powder. Using toothpicks, secure bacon while wrapping the entire breast. Sprinkle your favorite season blend over breasts and you are ready to grill!

Preheat grill. Place bacon-wrapped chicken breasts on the grill on medium/low heat for 10–12 minutes each side. Turn chicken breasts when bacon appears cooked (10–12 minutes) on the bottom side and brush with BBQ sauce. Continue to brush BBQ sauce periodically for another 10–12 minutes or until done.

Remove from the grill and let stand 5 minutes. Best served with Bush’s Bourbon and Brown Sugar Grillin’ Beans.

This was delicious and my husband really liked it. Instead of stuffing the breast after cutting it in the middle, I flattened the breast then put the cheese in the center and rolled it. This seemed a bit easier than stuffing it. No cheese leaked out because I wrapped the bacon around really tightly and baked it instead of barbecuing. Very tasty!
