Description

An easy dinner idea!

Ingredients

  • 1 pound Beef Tenderloin, Chopped Into Bite Sized Pieces
  • ½ Tablespoons Sea Salt
  • 1 teaspoon Black Pepper
  • ½ pounds Whole Wheat Pasta Noodles (I Used Capellini)
  • 1 Tablespoon Olive Oil
  • ½ whole Onion, Chopped
  • ½ whole Red Pepper, Sliced
  • 1 cup Sugar Snap Peas
  • 1 cup Sliced Mushrooms
  • ½ whole Jalapeno, Chopped And Seeds Removed
  • 2 cloves Garlic, Minced
  • 2 Tablespoons Honey
  • 1 Tablespoon Soy Sauce
  • 1 pinch Red Pepper Flakes

Preparation

Season beef with salt and pepper and set aside.

Bring a pot of water to a boil and cook pasta according to directions.

While cooking pasta, heat olive oil in a large saucepan and add peppers and onions. Saute until soft, for about 5-6 minutes. Add in peas, mushrooms and jalapeno and cook for 3 more minutes. Stir in garlic and cook for 30 seconds. Remove veggies from pan and set aside in a bowl. Drain pasta if finished and set aside.

Turn the heat on your saucepan to medium-high, and add beef. Cook on each side for about 2-3 minutes, or until a nice golden color develops. Add honey and soy sauce, then stir in noodles and vegetables. Sprinkle with a pinch of red pepper flakes and serve. Season with salt and pepper if desired.

I made this last night with a few minor modifications to fit what I had on hand. It was incredibly easy, and everyone enjoyed it (including my husband and 20-month old daughter)! One thing I changed was to add 1 Tablespoon toasted sesame oil at the end, and I like the depth that added. It would still be good without it though. Thanks for posting the recipe.

This looks wonderful! I’ve only recently been making Chinese food at home, I didn’t think my kids would like it but turns out they LOVE it. So much healthier and tastier home made.
