Description

Hearty baked beans with kale. Perfect for a warm winter meal!

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 whole Yellow Onion, Chopped
  • 4 cloves Garlic, Minced
  • 8 cups Chopped Kale
  • 2 cans Cannellini Beans (15 Oz Each)
  • ½ cups Barbecue Sauce Of Choice (I Use Stubbs)
  • ½ cups Water
  • 2 Tablespoons Dijon Mustard
  • 2 teaspoons Hot Sauce
  • 2 Tablespoons Cider Vinegar
  • ¼ teaspoons Salt

Preparation

Preheat the oven to 350F.

Heat the olive oil in a large skillet over medium high heat. Add the onion and saute for about six minutes, until soft and translucent. Add the garlic and saute for another two minutes.

Add the chopped kale and cook for a few minutes, tossing frequently. Add remaining ingredients and mix well. Transfer to a 9-inch glass pan or baking dish. Bake beans, covered, for forty five minutes.

**These beans freeze extremely well!

Yummy!!! Wish the stores were open today, because I’d run out and get the kale and try them tonight. Will have to be patient and try tomorrow! Thanks!!!

hi! Hmm…you could technically just use red beans but this recipe is really good with the large white cannellini (white kidney beans) because they are so creamy! Let me know how it turns out!

I love making beans at home (crock pot or pressure cooker) – to freeze and have on hand for such dishes, as this. BUT I can not find dried cannellini beans. What’s with that?
I know they are basically white kidney beans…can I just use red kidneys? Off to read up on these beans…

I can’t wait to get some (canned) beans to make this – looks scrumptious!!
