Description

A great dinner served with rice. If you don’t like halibut, you can substitute chicken.

Ingredients

  • 1-½ pound Halibut, Sliced Into 1-inch Cubes
  • ½ cups Flour
  • 6 Tablespoons Oil
  • 20 ounces, fluid Pineapple Chunks, Drained And Reserved Syrup
  • ½ cups Brown Sugar
  • 2 Tablespoons Cornstarch
  • ⅓ cups Vinegar
  • 4 Tablespoons Soy Sauce
  • ½ teaspoons Hot Sauce
  • 1 cup Green Pepper, Cubed
  • ½ cups Red Pepper, Cubed
  • 1 cup Onion, Chopped

Preparation

Cut halibut in 1-inch cubes, season with salt and pepper, and coat with flour. Sauté in butter or oil in a skillet for 4–6 minutes or until browned. Remove and set aside.

Drain pineapple, reserving syrup. Add water to reserved syrup to equal 2 cups. In a bowl, combine syrup/water mixture, sugar and cornstarch. After this mixture is combined, stir in vinegar, soy sauce and hot pepper sauce.

In same skillet, saute green pepper, red pepper and onion for about 2 minutes or until crisp-tender. Add pineapple sauce mixture to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Add pineapple chunks. Remove from heat and combine sauce mixture and halibut.

Place mixture in a baking dish and bake at 350ºF for 30 minutes.
