Preheat oven to 350 F. Put the flour on a plate or in a shallow bowl. Dip chicken strips in flour on both sides, and lay them in a 9×13 casserole dish that you’ve sprayed with non-stick spray.
Mix apricot preserves with 1 package of dry onion soup mix. Spread the mixture over the chicken strips.
Pour Russian dressing over everything. Bake for 1 hour.
Serve with fried rice and egg rolls.
